Chocolate Protein Peanut Butter Bites

Looking for a snack that hits the sweet spot without the sugar crash? These Chocolate Protein Peanut Butter Bites have just the right amount of sweetness to curb cravings while packing in protein to keep you full. I’ve swapped out a third of the butter and brown sugar, added protein powder, whole wheat flour for a boost of whole grains, and of course, included rich dark chocolate for that satisfying indulgence. The result is a balanced, satisfying snack that feels like a treat but works for your goals. Enjoy them as a post-workout bite, an afternoon pick-me-up, or a late-night nibble when that chocolate craving hits!

Equipment

Ingredients
  

  • 3/4 cup peanut butter natural, smooth
  • 4 Tablespoons butter unsalted, softened
  • 2 eggs large
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat flour
  • 1/2 cup chocolate protein powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips

Instructions
 

  • Preheat the oven to 350° F. Coat mini muffin tins (need 24, so might be two batches of 12) in total) with nonstick cooking.
  • In a small bowl, whisk together the whole wheat flour, protein powder, baking soda and salt. Set aside.
  • In a standing electric mixer (or hand held), add the peanut butter and softened butter. Beat until creamy.
  • Add the eggs, brown sugar and vanilla. Beat again until smooth.
  • Add the dry ingredients and gently blend until well-combined.
  • Using a tablespoon, divide the batter into the prepared mini muffin tins.
  • Top each muffin with a few dark chocolate chips.
  • Bake for about 15 minutes, or until an inserted toothpick comes out with a few crumbs. Remove from tins to cool. Enjoy!
  • Store completely cooled muffins in a sealed container for up to a week, or in the freezer for up to a month.

1 mini muffin = 120 calories, 5g protein, 8g fat, 9g carbohydrates
