PUMPKIN PIE BEAN DIP

Looking for a fun, healthy fall appetizer? No need to wait until Thanksgiving for some pumpkin pie, when you can be dipping in it instead…😉! It’s creamy, packed with cozy autumn flavors, and takes no time at all to whip up. Whether you’re snacking solo or serving for company, this dip pairs deliciously with apple slices, graham crackers, or veggies. Plus, it’s a nutritional delight, as pumpkin is rich in fiber, vitamins A and C, and antioxidants, while pumpkin seeds add a boost of healthy fats and magnesium. 🎃

  • Food processor or blender

Ingredients
  

  • 4 1 1/2 cups white beans drained and rinsed
  • 1 cup pumpkin puree
  • 3 Tablespoons maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1/4 cup coconut milk reduced-fat, canned
  • Optional: 2 Tablespoons pumpkin seeds and/or pecans raw, crushed

Instructions
 

  • Place the all ingredients, except pecans, in a food processor and pulse until smooth. Add water or more coconut milk as needed to thin the mixture. .
  • Transfer to a bowl and allow to sit for 15 minutes before garnishing with pecans and serving.
  • Serve with sliced apples or a whole charcuterie board :). Makes 4 appetizer servings
