PEACHY GUACAMOLE
As we navigate a not-so-sunny Spring in the Northeast, I'm dreaming of summer sunshine. Fresh peaches can bring a taste of summer to your senses, even as you wait for the real thing. Enjoy this peachy guacamole with fresh-cut veggies and whole-grain pita or tortilla chips.
Prep Time 15 minutes mins
Total Time 15 minutes mins
Servings 8 1/2 cup servings
- 4 medium avocados peeled and chopped
- 2 medium peaches peeled and chopped (for a shortcut, you can use canned “in their own juice”)
- ½ small jalapeno pepper chopped, seeds removed (you can use more for more heat)
- ¼ cup red onion chopped
- ¼ cup fresh cilantro chopped
- 3 Tablespoons fresh lime juice
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1-2 sprinkles red pepper flakes optional
Place the avocados in a medium bowl and mash with a fork, leaving some small chunks.
Add the peaches, jalapeno, onion, cilantro, lime juice, salt, black pepper, and red pepper flakes (optional).
Serve with fresh veggies and whole-grain tortilla or pita chips.
