PEACHY GUACAMOLE

As we navigate a not-so-sunny Spring in the Northeast, I'm dreaming of summer sunshine. Fresh peaches can bring a taste of summer to your senses, even as you wait for the real thing. Enjoy this peachy guacamole with fresh-cut veggies and whole-grain pita or tortilla chips.

Equipment

  • medium mixing bowl, fork for mashing

Ingredients
  

  • 4 medium avocados peeled and chopped
  • 2 medium peaches peeled and chopped (for a shortcut, you can use canned “in their own juice”)
  • ½ small jalapeno pepper chopped, seeds removed (you can use more for more heat)
  • ¼ cup red onion chopped
  • ¼ cup fresh cilantro chopped
  • 3 Tablespoons fresh lime juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1-2 sprinkles red pepper flakes optional

Instructions
 

  • Place the avocados in a medium bowl and mash with a fork, leaving some small chunks.
  • Add the peaches, jalapeno, onion, cilantro, lime juice, salt, black pepper, and red pepper flakes (optional).
  • Serve with fresh veggies and whole-grain tortilla or pita chips.
