WARM MUSHROOM AND GREENS SALAD WITH SESAME DRESSING
Equipment
- large sauté pan
Ingredients
- 1 lb mushrooms cremini, washed and sliced
- 1 bunch dandelion greens washed and chopped (and/or chard, kale)
- 6 scallions chopped
- 2 Tablespoons olive oil
- 2 teaspoons toasted sesame oil
- 1/2 teaspoon salt
Dressing Ingredients
- 3 Tablespoons sesame seeds
- 3 Tablespoons rice vinegar
- 2 Tablespoons coconut aminos or low-sodium soy sauce for less sweetness
- 2 teaspoons maple syrup
- freshly ground black pepper optional
Instructions
- Place the dressing ingredients in a small bowl. Whisk until smooth and set aside.
- Place a large sauté pan over medium heat. Add the olive oil and sesame oil to the pan. Allow to warm for 1-2 minutes.
- Add the prepared mushrooms to the pan and sauté mushrooms until they release their fluid and start to brown, about 4-5 minutes.
- Add the prepared dressing ingredients to the pan along with the scallions. Stir constantly until the pan is deglazed.
- Add the chopped greens and remove from the heat. Cover until greens are wilted.
- Place into a serving bowl or four small salad bowls and serve warm. Top with freshly ground black pepper, if desired.
- Additional topping ideas: feta cheese, lean protein like chicken, shrimp, or tofu, or roasted nuts like almonds or pistachios
