WARM MUSHROOM AND GREENS SALAD WITH SESAME DRESSING

Cozy, nourishing, and packed with flavor, this Warm Mushroom and Greens Salad with Sesame Dressing is the perfect way to warm up your salad game. 🍄🥬 Sautéed mushrooms bring deep, savory richness, while fresh greens add an earthy contrast, all tied together with a nutty, umami-packed sesame dressing. Equipment

  • large sautĂ© pan

Ingredients
  

  • 1 lb mushrooms cremini, washed and sliced
  • 1 bunch dandelion greens washed and chopped (and/or chard, kale)
  • 6 scallions chopped
  • 2 Tablespoons olive oil
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon salt

Dressing Ingredients

  • 3 Tablespoons sesame seeds
  • 3 Tablespoons rice vinegar
  • 2 Tablespoons coconut aminos or low-sodium soy sauce for less sweetness
  • 2 teaspoons maple syrup
  • freshly ground black pepper optional

Instructions
 

  • Place the dressing ingredients in a small bowl. Whisk until smooth and set aside.
  • Place a large sautĂ© pan over medium heat. Add the olive oil and sesame oil to the pan. Allow to warm for 1-2 minutes.
  • Add the prepared mushrooms to the pan and sautĂ© mushrooms until they release their fluid and start to brown, about 4-5 minutes.
  • Add the prepared dressing ingredients to the pan along with the scallions. Stir constantly until the pan is deglazed.
  • Add the chopped greens and remove from the heat. Cover until greens are wilted.
  • Place into a serving bowl or four small salad bowls and serve warm. Top with freshly ground black pepper, if desired.
  • Additional topping ideas: feta cheese, lean protein like chicken, shrimp, or tofu, or roasted nuts like almonds or pistachios
