Sheet Pan Salmon with Feta, Peppers, and Basil

Ingredients
- 2 red bell peppers diced
- 1 red onion diced
- 1 Tablespoon olive oil divided
- 1 teaspoon kosher salt divided
- Freshly ground black pepper to taste
- 4 6-ounce salmon fillets
- 1 1/2 teaspoons za'atar
- 1 1/2 teaspoons ground cumin
- 1/8 teaspoon cayenne pepper
- 1 1/2 teaspoons brown sugar
- 4 ounces feta reduced fat or fat free works great
- 1/2 lemon
- 1/2 cup fresh basil chopped
Instructions
- Preheat oven to 450°F.
- Line a large sheet pan with parchment paper.
- Place the prepared peppers and onions onto the center of the sheet pan. Drizzle with half tablespoon olive oil, half teaspoon of salt, and freshly ground pepper.
- With your clean hands, gently mix together. Spread the mixture to frame the sheet pan, but not too close to the edges. Set aside.
- Season the salmon with the other half teaspoon of salt and freshly ground pepper.
- In a small bowl, mix together the za'atar, cumin, cayenne pepper, and brown sugar.
- Sprinkle the spice mixture evenly on top of the salmon fillets. Slightly pat down and drizzle or spray evenly with half tablespoon of olive oil.
- Place the salmon fillets in the center of sheet pan, surrounded by the peppers and onions. Break the feta into small pieces while scattering over the top of the fish and vegetables.
- Place the sheet pan in the oven. Roast for 10-12 minutes, or until salmon is cooked to your liking.
- Remove from oven and squeeze fresh lemon juice and sprinkle the basil over the top. Serve straight from the pan.
