SAVORY FARRO SALAD WITH CHICKEN AND ROASTED CARROTS
Equipment
- medium-size saucepan
- 4 medium-size mason jars
Ingredients
- 1 1/2 cups farro rinsed
- 4 1/2 cups water or low-sodium broth
- 2 cups carrots roasted, or any leftover roasted veggies (roasted carrot suggestion🥕- https://rebelliousrd.com/gingered-carrots/)
- 4 green onions chopped
- 2 cups cherry tomatoes sliced
- 3 chicken breasts grilled or baked leftovers
- 8 cups romaine lettuce chopped
- 1/3 cup sunflower seeds unsalted
- Dressing
- 3/4 cup Greek yogurt 2%
- 4 Tablespoons lemon juice freshly squeezed
- 1 1/3 Tablespoons fresh garlic minced
- 4 Tablespoons olive oil
- 1 1/3 Tablespoons fresh dill chopped
- salt and freshly ground pepper to taste
Instructions
- For the salad:
- Bring water (or broth) to a boil in a medium saucepan. Add farro and simmer for 25-30 minutes until soft but slightly chewy. Set aside to cool if creating lunch jars, or keep warm if using for dinner.
- Set aside pre-roasted carrots or any roasted veggies.
- For the dressing:
- In a small bowl, whisk together the Greek yogurt, lemon juice, minced garlic, olive oil, dill, salt, and pepper. Set aside.
- To assemble:
- Divide the dressing evenly among four mason jars.
- Layer with chopped green onions, sliced cherry tomatoes, cooked farro, roasted carrots, grilled chicken (or alternative protein), sunflower seeds, and top with romaine lettuce.
- Seal the jars and refrigerate until ready to serve.
- Invert into a serving bowl – toss and enjoy!
