ROASTED GARLIC TAHINI SAUCE WITH PROTEIN AND VEGGIES

Ingredients
- 4 whole garlic cloves peeled
- 1 teaspoon extra virgin olive oil
- 1 pound chicken sausage or boneless, skinless, chicken breast or extra firm tofu, cut into 1-inch chunks
- 2 bell peppers seeded and cut into 1-inch pieces
- 2 cups broccoli florets
- ¼ cup tahini sauce
- ¼ cup vegetable broth low sodium
- 1 teaspoon fresh ginger grated
- 1 teaspoon toasted sesame oil
- 1 teaspoon sriracha
- 1 Tablespoon honey
- 2 Tablespoons soy sauce low sodium
- 2 teaspoons sesame seeds
- nonstick cooking spray
- Option: sprinkle with 1-2 tablespoons of panko for a crunch
Instructions
- Preheat the oven to 400°F. Place garlic cloves and olive oil in a small bowl and mix to cover each glove with olive oil. Place garlic cloves on a parchment-lined baking sheet.
- Bake the garlic cloves in the oven until they are tender, golden, and creamy. Depending on your oven, this should take between 20-30 minutes, stirring them midway through baking.
- Remove from oven and increase oven temperature to 425°F.
- Spray a rimmed sheet pan with nonstick cooking spray.
- Place your protein of choice, peppers, and broccoli on the sheet pan.
- Place the roasted garlic cloves, tahini, broth, ginger, sesame oil, sriracha, honey, and soy sauce in a blender. Blend for about 1 minute. Taste and adjust any seasoning desires. Take a quarter cup of sauce and toss with the sheet pan mixture, setting the remaining sauce aside.
- Place the sheet pan in the oven and bake for 20 minutes, stirring halfway.
- Toss with sesame seeds and continue to cook for 5-6 more minutes, or until protein is cooked through and vegetables are roasted.
- Remove from oven and place in a serving bowl. Toss with the remaining sauce.
- Optional garnish: sesame seeds, extra siracha
