ROASTED GARLIC TAHINI SAUCE WITH PROTEIN AND VEGGIES

This creamy, dreamy sauce is packed with rich roasted garlic flavor, a nutty tahini base, and just the right balance of sweet and spicy to keep things interesting. Ingredients
  

  • 4 whole garlic cloves peeled
  • 1 teaspoon extra virgin olive oil
  • 1 pound chicken sausage or boneless, skinless, chicken breast or extra firm tofu, cut into 1-inch chunks
  • 2 bell peppers seeded and cut into 1-inch pieces
  • 2 cups broccoli florets
  • ¼ cup tahini sauce
  • ¼ cup vegetable broth low sodium
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sriracha
  • 1 Tablespoon honey
  • 2 Tablespoons soy sauce low sodium
  • 2 teaspoons sesame seeds
  • nonstick cooking spray
  • Option: sprinkle with 1-2 tablespoons of panko for a crunch

Instructions
 

  • Preheat the oven to 400°F. Place garlic cloves and olive oil in a small bowl and mix to cover each glove with olive oil. Place garlic cloves on a parchment-lined baking sheet.
  • Bake the garlic cloves in the oven until they are tender, golden, and creamy. Depending on your oven, this should take between 20-30 minutes, stirring them midway through baking.
  • Remove from oven and increase oven temperature to 425°F.
  • Spray a rimmed sheet pan with nonstick cooking spray.
  • Place your protein of choice, peppers, and broccoli on the sheet pan.
  • Place the roasted garlic cloves, tahini, broth, ginger, sesame oil, sriracha, honey, and soy sauce in a blender. Blend for about 1 minute. Taste and adjust any seasoning desires. Take a quarter cup of sauce and toss with the sheet pan mixture, setting the remaining sauce aside.
  • Place the sheet pan in the oven and bake for 20 minutes, stirring halfway.
  • Toss with sesame seeds and continue to cook for 5-6 more minutes, or until protein is cooked through and vegetables are roasted.
  • Remove from oven and place in a serving bowl. Toss with the remaining sauce.
  • Optional garnish: sesame seeds, extra siracha

Notes

Feel free to roast more garlic cloves while you are at it, as roasted garlic cloves give a smooth and creamy sweetness to any sauce.
