PUMPKIN SEED PESTO

Take your pesto game to the next level with this delicious and nutrient-packed Pumpkin Seed Pesto! By swapping traditional pine nuts for pumpkin seeds, you’ll get a boost of magnesium, zinc, and heart-healthy fats. Plus, nutritional yeast for that perfect cheesy flavor—without the dairy! Nutritional yeast is not only a great vegan-friendly cheese alternative, but it’s also packed with B vitamins and is a complete protein. This pesto is perfect for pasta, fish, tofu, and sandwiches, or add a couple of tablespoons to a cup of plain Greek yogurt as a dip for your favorite veggies! 🌱

Equipment

  • Food processor or blender

Ingredients
  

  • 1/2 lemon juiced and zested
  • 2 cups basil packed
  • 1/4 cup pumpkin seeds
  • 1 clove garlic chopped
  • 2 Tablespoons nutritional yeast
  • 3 Tablespoons olive oil
  • salt to taste

Instructions
 

  • In a food processor, combine basil, pumpkin seeds, garlic, lemon zest and juice, and nutritional yeast. Pulse to roughly combine.
  • With the motor running, slowly pour in 3 tablespoons of olive oil.
  • Process until mixture is smooth, about 10-15 seconds. You will likely need to stop and wipe the edges of the blender or food processor and then resume pureeing.
  • Season with salt and pepper.
