Nutty and Sweet Brussels Sprout Salad

Who says Brussels sprouts can’t shine outside the roasting pan? This Sweet and Nutty Brussels Sprout Salad is proof that these tiny green gems deserve the spotlight. Shaved thin and tossed with juicy pears, ruby-red pomegranate arils, and crunchy pecans, every bite bursts with texture and flavor. Packed with fiber, antioxidants, and heart-healthy fats, it’s a powerhouse for your gut, heart, and blood sugar balance, all while tasting like a treat. Equipment

  • food processor, if needed

Ingredients
  

Salad

  • 2 lbs Brussels sprouts shaved (use a food processor or purchase already shaved for a shortcut)
  • 2 pears chopped into small bite-size pieces
  • 1 cup pomegranate arils from 1 small pomegranate or purchase for a shortcut
  • 1/3 cup pecans raw, roughly chopped

Dressing

  • 1/4 cup olive oil
  • 1/4 cup tahini
  • 1 lemon juiced (for 1/2 Tablespoon juice)
  • 2 teaspoons Dijon mustard
  • 2 teaspoons maple syrup
  • 2 Tablespoons cold water
  • salt to taste
  • black pepper to taste

Instructions
 

  • Combine the shaved Brussels sprouts, pears, pomegranates, and pecans in a bowl.
  • To make the dressing, combine all ingredients in a mason jar or other container with a lid, and shake to emulsify. If necessary, add more water to thin the dressing. Season to taste with salt.
  • When ready to serve, drizzle the dressing over the salad ingredients and toss to combine.
