This is a fun, fancy, and delightfully satisfying way to get your hands messy while creating an impressive presentation and a delicious and satisfying bite of Mediterranean zing! The key is letting the peeled cucumber slices drain on paper towels for at least one hour. They can be prepared a day in advance, or served immediately.
MEDITERRANEAN CUCUMBER SUSHI
Ingredients
- 2 large cucumbers
- 2 Tablespoons hummus
- ¼ cup feta cheese crumbled
- 2 Tablespoons chopped kalamata olives
- 3 Tablespoons red bell pepper diced
- Fresh dill sprigs or parsley sprigs
- Lemon wedges
Instructions
- Set about 4 paper towel sheets on the counter. Holding the cucumber the long way, use a vegetable peeler and peel long strips (place the initial strip of the cucumber skin aside, as it will not work for the rolls), placing each one on the paper towels. Once you hit the seeds, repeat on the other side of the cucumber. Complete the process with the second cucumber (saving the insides of the cucumber for your next salad or dip!). Let the cucumber strips drain on the paper towels to remove the excess moisture for at least one hour.
- Using the back of a teaspoon, spread a thin layer of the hummus onto each cucumber strip. Lightly sprinkle the feta, olives, and red pepper. It is truly a think layer, as otherwise you will lose most of it when you roll up the strip!
- Carefully and tightly roll each strip. Place on a serving dish. Place a small dill or parsley sprig into each roll. Sprinkle with freshly squeezed lemon juice and serve.
