- 2 Tablespoons olive oil
- 4 zucchini sliced into half circles
- 6 cups spinach baby
- 1 lemon juiced and zested
- salt and pepper to taste
- Optional additions: hot sauce fresh garlic, fresh basil
Place a large skillet over medium heat. Add the olive oil to the skillet.
Add the zucchini and sauté for 4-5 minutes.
Add spinach and cook until wilted, about 2-3 minutes.
Add the lemon juice and zest. Cook until at least half the juice evaporates.
Season with salt and pepper to taste, and any additional spices desired.
