Blueberry and Chocolate Oatmeal Bars

Packed with antioxidants from blueberries, fiber-rich oats, and the satisfying taste of chocolate, these bars offer a balanced mix of nutrients to keep you energized throughout the day. They’re a great way to satisfy your sweet tooth while fueling your body with wholesome ingredients. Whether for breakfast or a midday snack, these bars are delicious, nutritious, and addicting… as you will return for more. Keep in mind they are also napkin-needy or use a fork 🙂.

Equipment

  • food process or blender, 8×8 baking pan

Ingredients
  

  • 2 cans chickpeas low sodium, rinsed and drained
  • 1 cup quick oats
  • ¼ cup Greek yogurt plain, nonfat
  • 1 cup applesauce unsweetened
  • ¼ cup almond butter or peanut butter
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ cup brown sugar
  • cup mini chocolate chips
  • 1 pint fresh blueberries washed and stems removed
  • Nonstick cooking spray

Instructions
 

  • Preheat oven to 350 degrees F.
  • Spray an 8×8 baking dish with nonstick cooking spray. Set aside.
  • Place the chickpeas through the brown sugar into a food processor or powerful blender. Blend for 1-2 minutes or until well combined.
  • Pour the mixture into a medium mixing bowl.
  • Add the mini chocolate chips and blueberries and gently blend into the mixture. Pour the mixture into the prepared pan.
  • Place in the oven and bake for 40-45 minutes. Insert a toothpick into the center to check for doneness.
  • Cool in pan for 15 minutes. Slice into 16 squares.

Notes

These can be stored in the refrigerator for up to two weeks. They can be consumed chilled as part of a breakfast or snack or heated for 8-10 seconds in the microwave.
