MISO FAIRYTALE EGGPLANTS

These petite eggplants fit snugly in the palm of your hand! Simply slice them in half lengthwise and throw them on the grill or sauté them with a drizzle of olive oil. Top with a splash of dressing from the kale salad (or prepare per the recipe below) for an added burst of flavor!

Equipment

  • Blender

Ingredients
  

  • 1 dozen fairytale eggplants

Miso dressing ( from Kale Salad with Miso Dressing recipe)

  • 1/4 cup balsamic vinegar
  • 3 Tablespoons olive oil
  • 2 teaspoons miso paste
  • 1/2 teaspoon crushed garlic or 1 clove
  • 1/4 cup fresh basil chopped
  • 3-4 Tablespoons vegetable broth low sodium
  • freshly ground pepper to taste

Instructions
 

  • Slice eggplants in half lengthwise.
  • Preheat grill or grill pan to medium-high temperature.
  • Add sliced eggplants and grill for about 4-5 minutes per side, or until moist and slightly and charred.
  • Place on serving dish and set aside.
  • If not using leftover dressing from the kale salad :), pour balsamic vinegar through broth into the blender. Blend until well mixed.
  • Pour desired amount on top of cooked eggplants and sprinkle with fresh black pepper to taste. Makes 4-6 servings.
